Why I Love This Recipe

Layered cranberry cake!


Ingredients You'll Need

1/2 cup soft butter
1 cup sugar
2 eggs
2 cup self-rising flour
1 (8 oz) sour cream
1 tsp almond extract
1 (16 oz can) whole berry cranberry sauce
1/2 cup chopped pecans


Directions

Preheat oven to 350F


Grease and flour 10" tube pan


Cream butter and sugar


Add eggs and beat well


Add flour alternately with sour cream, mixing well each time


Add almond extract


Pour 1/3 of the batter into the pan


Spread 1/2 can of cranberry sauce over the batter


pour 1/3 of batter over the sauce


reserve 3 tablespoons of the cranberry sauce and the rest over the batter


Finish by pouring the remaining batter into the pan evenly


Sprinkle the top with pecans


bake for 1 hour at 350F


For Glaze:
Mix 3/4 cup powdered sugar with reserved cranberry sauce.
Pour over the cake wile still warm
