Cranberry Orange Almond Quick Bread

Ingredients You'll Need
3 cups all-purpose flour
3 Tbsp sugar
1 Tbsp baking powder
1/2 tsp salt
1 cup dried cranberries
1/2 cup sliced almonds, toasted
1 large egg, room temperature
1 cup fat-free milk
1/3 cup canola oil
3/4 tsp grated orange zest
3/4 tsp almond extract
Preheat oven to 350.
Toast almonds on the stove just until fragrant.
Whisk together flour, sugar, baking powder, and salt.
Stir in cranberries and almonds.
In a separate bowl, whisk together egg, milk, oil, zest and extract.
Add to flour mixture and stir just until moistened.
Transfer to a greased 9x5 loaf pan.
Bake for 40-50 minutes or until a toothpick comes out clean.
