Crazy Cake (Vegan)

Why I Love This Recipe
Here's a cake recipe I found online a few years ago. It makes an incredibly moist chocolate cake (we ate it without icing) and it seems to be vegan through no fault of its own (I noticed there were no animal products in it). Plus, you make it all in one bowl. Less mess!
I did try it with the cherry pie filling in the middle, and it was good but it made the cake really mushy in the middle where the pie filling was. I think I'd prefer it without.
Ingredients You'll Need
3 cups flour
2 cups sugar
6 Tablespoons cocoa
2 tsp. soda
1 tsp.salt
2/3 c. oil
2 Tablespoons vinegar
2 tsp. vanilla
2 cups water
Directions
Mix flour, sugar, cocoa, soda and salt. Add in the oil, vinegar, vanilla and water
Mix well. Pour into greased 9 x 13 inch pan. Bake at 350 degrees for 30 minutes.
Variation: Instead of vanilla, add almond extract. Get one of the big size cans of cherry pie filling. Put 1/2 the batter in the cake pan, then spread the cherry filling over that, then put the rest of the batter on top. All the filling oozes to the bottom as you bake it and really makes it decadent!
Option2: After cooling, ice cake
Option3: Serve it in BIG squares, unfrosted, but sprinkle some powdered sugar over the top.
