Creamy Broccoli Soup

Whenever it rains, or I get sick, or just need a cozy day at home, this recipe is perfect for warming your heart and soul. Snuggle down with a bowl and a good movie.
Ingredients You'll Need
1 Onion
2 Long Carrots
2 Rustic Potatoes
1 can of corn Corn
Veggie Broth
Soaked Cashews* (overnight, or at least 2 hours)
Nutritional Yeast
Salt
Pepper
Croutons for decoration
*Requires an blender, and immersion blender
Directions
Add 1 cup of cashews to a bowl with approx. 3/4 cup of water. Allow to soak for at least 2 hours, or overnight for a creamier texture..
Chop and boil the onion, carrots in veggie broth.
Once veggies are boiled and soft, add corn, then blend with the immersion blender.
Add nutritional yeast to taste and simmer. This will add a cheesy flavour to the soup.
Blend the soaked cashews and add to the soup.
Salt and pepper to taste.
