Creamy Cajun Chicken Pasta

Why I Love This Recipe
Easy one-pot meal!
Ingredients You'll Need
CAJUN SEASONING
2 tsp smoked paprika
1 tsp oregano
1 tsp thyme
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp cayenne pepper
1/4 tsp black pepper
1/4 tsp salt
CHICKEN PASTA INGREDIENTS
1 Tbsp olive oil
1 Tbsp butter
1 lb. boneless, skinless chicken breast
1 yellow onion, diced
1/2 lb. penne pasta (uncooked)
15 oz. fire roasted diced tomatoes
2 cups chicken broth
2 oz. cream cheese
3 green onions, sliced
Directions
Combine Cajun seasonings in a small bowl and pour over cubed chicken (1/2 to 3/4-inch), stir until coated.
Heat olive oil and butter to a large deep skillet over medium-high until very hot and butter is melted. Add chicken and cook for a couple minutes on each side, or just browning.
Add onion and continue to sauté for about 2 minutes more, or until soft and browning.
Add pasta, tomatoes (with juice), and chicken broth; stir until mixed and cover.
Bring to a boil then lower to medium-low and simmer approx. 10 ten minutes, stirring occasionally to prevent pasta from sticking.
When pasta is tender and liquid is reduced to a thick sauce, add cream cheese, stir until melted.
Top with sliced green onions and serve.
