Creamy Garlic Soup with Herb Croutons

Garlic has been used for both culinary and medicinal purposes for over 5,000 years.


Ingredients You'll Need

8 cloves garlic, peeled
1 medium onion, chopped
2 tablespoons olive oil
4 cups vegetable stock
1 cup heavy cream
Salt and freshly ground black pepper, to taste
4 slices of bread, cubed
2 tablespoons butter
1 teaspoon dried mixed herbs


Directions

In a large pot over medium heat, sauté the chopped onion and peeled garlic cloves in olive oil until softened and fragrant, about 5-7 minutes.


Add the vegetable stock and bring to a boil. Reduce heat to low, cover, and let simmer for 20 minutes.


Using an immersion blender, blend the soup until smooth. Add the heavy cream and adjust seasoning with salt and pepper.


To prepare croutons, heat butter in a skillet over medium heat, add bread cubes, and sprinkle with dried herbs. Toss frequently until bread is golden and crispy, then remove from heat.


Serve the soup in bowls, garnished with the herb croutons and additional black pepper if desired.
