Pesto, a popular Italian sauce, originated in Genoa, Italy, and traditionally consists of basil, garlic, pine nuts, Parmesan cheese, and olive oil.

Ingredients You'll Need

12 oz pasta (your choice of type)
1 cup heavy cream
2 tbsp cream cheese or mascarpone (optional for extra creaminess)
1/2 cup pesto sauce
1/4 cup grated Parmesan cheese, plus extra for serving
1 cup cherry tomatoes, halved
1 cup spinach leaves
Salt and pepper to taste
1 tbsp butter (optional for a buttery finish)


Cook the pasta according to package instructions. Reserve 1/2 cup of pasta cooking water, then drain the pasta and set aside.

In a large skillet, heat the heavy cream over medium heat until it starts to simmer.

If you’re using cream cheese or mascarpone, stir it in now until melted and smooth.

Stir in the pesto sauce and Parmesan cheese until well combined.

Add the cherry tomatoes and spinach leaves, cooking until the spinach is wilted and the tomatoes are slightly softened.

Add the cooked pasta to the skillet and toss to coat evenly. If the sauce is too thick, add a bit of the reserved pasta water until you reach the desired consistency.

If you want a buttery finish, stir in the butter until melted and combined.

Season with salt and pepper to taste. Serve immediately, topped with extra Parmesan cheese if desired.
