Creamy Spicy White Beans

Why I Love This Recipe

My husband and I came up with this so we could have a hearty side dish to stand in for potatoes sometimes. I never really measure when I make these so I've given my best guess at measurements.


Ingredients You'll Need

1 can cannellini beans, drained (great northern also work in a pinch)
1 T olive oil
Couple cloves garlic, diced, to your tastes
Red pepper flakes
Shy 1/4 c cream
Salt


Directions

Heat oil in saucepan. Add garlic and pepper flakes and cook till garlic is translucent. Stir in beans and warm over med heat till beans are warmed through. Stir in cream, a little at a time (you don't want them too-liquidy). Cook a minute more to mingle flavors. Remove from heat and mash up with potato masher till a consistency you like. Add more cream if they're a little dry.


Other things we add sometimes: shallots, red onion, parsley, thyme
