Ingredients You'll Need
2 tbsp olive oil
1 medium onion, chopped
3 cloves garlic, minced
4 cups canned crushed tomatoes
2 cups vegetable broth
1/2 cup heavy cream
1/4 cup fresh basil leaves, chopped (or 1 tbsp dried basil)
Salt and pepper to taste
Directions
Heat olive oil in a saucepan over medium heat. Sauté onion until translucent.
Add garlic; cook 1 minute more.
Stir in crushed tomatoes and vegetable broth; bring to a simmer for 15 minutes.
Use an immersion blender to puree soup until smooth, or carefully transfer to blender in batches.
Stir in heavy cream and basil; cook for 5 minutes more.
Season with salt and pepper. Serve hot, garnish with extra basil if you like.
