1 1/4 Cups butter
1/2 Cup unsweetened cocoa powder
3 1/2 Cups sifted powdered sugar
1 egg, beaten
1 teaspoon vanilla
2 Cups Graham cracker crumbs
1/3 Cup green creme de menthe liqueur
1 1/2 Cups semi-sweet chocolate pieces
In a heavy saucepan combine 1/2 cup of the butter and 1/2 cup cocoa powder. Cook and stir over low heat until butter is melted or melt in a 350 degree oven for 5-10 minutes. Remove from heat, stir in 1/2 cup of the powdered sugar, the egg, and vanilla.
Add graham crackers; stir til combined. Press onto bottom of uncreased 13x9x2" baking pan.
Melt 1/2 cup butter. In a mixing bowl, combine melted butter and creme de menthe. Gradually add the remaining powdered sugar, beating with electric mixer until smooth. Spread over chocolate layer. Chill in the refrigerator for 1 hour.
In a heavy saucepan combine 1/4 cup butter and chocolate pieces. Cook and stir over low heat until melted. Spread over mint layer.
Cover and chill 1 to 2 hours or til firm. Cut into small squares. Store in refrigerator.
