Why I Love This Recipe

Almond flour and parmesan cheese create a delicious crispy coating for the chicken, making it a low carb alternative to traditional fried chicken.

Ingredients You'll Need

4 boneless, skinless chicken breasts
1 cup almond flour
1/2 cup grated parmesan cheese
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
2 eggs
2 tablespoons olive oil

Directions

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a shallow dish, mix together the almond flour, parmesan cheese, paprika, garlic powder, onion powder, salt, and black pepper.

In another dish, beat the eggs.

Dip each chicken breast into the beaten eggs, then coat with the almond flour mixture, pressing the coating onto the chicken to adhere.

Place the coated chicken breasts on the prepared baking sheet and drizzle with olive oil.

Bake in the preheated oven for 25-30 minutes or until the chicken is golden brown and cooked through.

Serve the crispy baked low carb fried chicken hot with your favorite dipping sauce or side dishes.

Pairs Well With

Serve with a side of cauliflower mash and a refreshing cucumber salad.
