Ingredients You'll Need

4 boneless, skinless chicken breasts, pounded to even thickness
1 cup flour
2 large eggs, beaten
1 cup breadcrumbs
1/2 cup grated Parmesan cheese, divided
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup olive oil (or as needed)
2 cups marinara sauce
1/2 cup shredded mozzarella cheese
1/4 cup chopped fresh basil, for garnish


Directions

Preheat oven to 375°F (190°C).


Prepare three breading stations: one with flour, one with beaten eggs, and one with a mix of breadcrumbs, 1/4 cup grated Parmesan cheese, garlic powder, salt, and black pepper.


Coat each chicken breast in flour, dip into the eggs, then coat in the breadcrumb mixture, pressing firmly to adhere.


Heat olive oil in a large skillet over medium heat. Brown the chicken for 2-3 minutes on each side until golden. Don't cook through fully. Transfer to an oven-safe dish.


Pour marinara sauce around the chicken and sprinkle the remaining Parmesan cheese and mozzarella evenly on top of the chicken breasts.


Bake for 20-25 minutes until chicken reaches an internal temperature of 165°F (74°C) and cheese is bubbly and golden.


Sprinkle chopped basil on top for garnish before serving.


Pairs Well With

A glass of Chianti (wine) or a cold glass of sparkling water with lemon
