Ingredients You'll Need

2 medium zucchinis, cut into sticks
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Optional: marinara sauce for dipping


Directions

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
Place the flour in a shallow dish. In another shallow dish, add the beaten eggs. In a third dish, combine the panko, Parmesan cheese, garlic powder, salt, and pepper.
Dredge each zucchini stick in flour, shaking off excess, then dip in the egg, ensuring it's evenly coated.
Roll the zucchini in the panko mixture, pressing gently to adhere.
Place the coated zucchini sticks in a single layer on the prepared baking sheet.
Bake for 20-25 minutes, or until golden brown and crispy, flipping halfway through for even baking.
Serve immediately with marinara sauce, if desired.
