Crock Pot Asian Ribs with Savory Sweet Potatoes

I always want my home to be a sanctuary; a place that my husband, children and I want to be and think of with warmth and love when we are away. This dish fills my home with an aroma that greets us at the door and ensures we will gather around the table for dinner, providing sweet memories and guaranteeing that we will gather again. I am constantly searching for and developing recipes that are simple and delicious and make it possible for my busy family of five to come together. This recipe came about after I was given sweet potatoes from a nearby farmer and needed a way to make them palatable to my carnivorous husband and son. The blending of the Asian flavors with Southern flair has "brought us home" time and again.
Ingredients You'll Need
2 lbs southern style pork ribs
1/2 cup brown sugar
1/2 cup soy sauce
1/4 cup sesame oil
1/4 tablespoon ground ginger
1/4 teaspoon cloves
2 garlic cloves, minced
3 medium sweet potatoes
Directions
Place everything but the sweet potatoes in the crockpot and cook on low 7-8 hours. An hour before you are ready to serve, wash the sweet potatoes and place the potatoes, whole, in a baking dish. Cook for 1 hr at 350 degrees, or until they easily pierce with a fork. Remove the skins from the potatoes and mash with 1/4 cup of the liquid from the crockpot. Serve ribs over the mashed sweet potatoes.
