Crockpot Sour Cream Salsa Chicken Low-Fat

Why I Love This Recipe

Made this one for last nights dinner. What a nice little recipe with lots of great taste. Moist with a wonderful little creamy sauce that reminds me of a stroganoff type of recipe only much lighter and healthier. It could not be any easier and this would also make one great sandwich as well. I served it with a side of garlic mashed potatoes. Very nice complete meal


Ingredients You'll Need

4 skinless, boneless chicken breasts halves( used thighs)
1 package of reduced sodium taco seasoning mix( this adds great flavor)
1 cup of salsa
2 Tbs of cornstartch( did not use)
1/4 cup of light sour cream


Directions

Spray the crockpot with cooking spray. Add the chicken breasts. Sprinkle with the Taco seasoning. Top with the Salsa. Cook on Low for 6-8 hours( Mine was about 6)When ready to serve, remove the chicken from the pot. Place the cornstartch in a small amount of water. Stir well and add to the salsa sauce, mix well,then add the sour cream. It's done~


Serves 4~ Weight Watchers Recipe


* I found that the sauce thickened up a "little" naturally so I just left it that way. You may want to double the amount of Salsa as mine cooked down considerably, which was fine for just 2 people
