This is not just your standard banana bread/cake. I love the topping and the cake.
Ingredients You'll Need
2 cups flour
1 1/2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 1/2 cups sugar
1/2 cup golden flavour crisco
1/4 cup buttermilk
1 cup mashed bananas (3 or 4 bananas)
2 eggs
1 tsp. vanilla
1/4 cup buttermilk
TOPPING:
1/3 cup golden flavour crisco
3/4 cup lightly packed brown sugar
3 tbsp. cream (can milk)
1 cup flaked coconut
3/4 cup chopped nuts
Directions
Combine flour, baking powder, baking soda and salt in a large bowl.
Add sugar, shortening, 1/4 cup buttermilk and banana.
Beat at medium speed for 2 minutes.
Add eggs, vanilla and 1/4 cup buttermilk.
Beat at medium speed for 1 minute.
Spread batter evenly in a greased 13 x 9” pan.
Bake at 350 degrees for 30 to 40 minutes.
TOPPING:
While cake is baking prepare topping.
Melt shortening in a small saucepan.
Stir in remaining ingredients thoroughly.
Remove cake from oven and immediately spread topping evenly over hot cake.
Broil 6” below element for 2 to 3 minutes or until bubbly and golden.
