Ingredients You'll Need
2 large organic seedless cucumbers
8-ounces flavored cream cheese (use your favorite GF, Vegetarian, Vegan or Paleo cream cheese)
1.) Thoroughly rinse and dry a cucumber
2.) Cut off the tips of both ends, discard.
3.) Using a vegetable peeler, alternate shaving strips down the entire length of the cucumber while leaving strips of the cucumber peel intact.
4.) Cut the cucumber into approximately 1 1/2-inch segments.
5.) Top each cucumber segment with a dollop of flavored cream cheese and a sun-dried tomato.
6.) Garnish with a sprig of fresh thyme.
7.) Refrigerate until ready to serve.
