Cucumber Mojito Mocktail (Or Cocktail)

Why I Love This Recipe
FEATURING: Cucumber.
A summer classic revisited! Adding cucumber makes this drink even more refreshing! Sit back, sip and enjoy the glorious summer!
*** FOR A COCKTAIL: add a little bit of rum OR a little bit of vodka for a change (ex: 1 ounce or less).
NOTE: You can leave the peel on the cucumber if you want, it will be slightly more grainy which we also like but not everyone does!
Ingredients You'll Need
2-inch slice of peeled cucumber
10 fresh mint leaves
1 ½ teaspoon of cane sugar (or less)
1 small to medium lime, juiced
Sparkling water (or club soda) (we tend to use approx. 1/2 cup to 2/3 cup per glass)
Directions
1. In a blender, purée the cucumber, mint, sugar and lime.
2. Add the blend to a tall slim glass (if using rum, add it now).
3. Fill your glass with ice. Top off with sparkling water (or club soda) and stir. Serve with a thick straw.
NOTE:
If you don’t want to use a blender (your drink will be more grainy/chunky), you can simply take your glass and muddle in the cucumber, mint and sugar until the cucumber offers no more resistance. Then, fill the glass with ice, then pour in the lime juice (and rum). Top off with club soda and stir. Serve with a thick straw.
