Cucumbers are my favorite veggies, and I absolutely love vinegar.


Ingredients You'll Need

2 medium cucumbers, thinly sliced
1/2 cup rice vinegar
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon sesame oil
1 tablespoon sesame seeds, toasted
2 tablespoons chopped fresh dill, for garnish


Directions

1. Thinly slice the cucumbers and sprinkle them lightly with a pinch of salt. Let them sit for 10 minutes in a colander to release excess moisture. Pat them dry with a paper towel.
2. In a mixing bowl, whisk together rice vinegar, sugar, salt, and black pepper until sugar dissolves. Stir in sesame oil.
3. Toss the sliced cucumbers with the vinegar dressing, ensuring they are evenly coated. Cover and let marinate in the refrigerator for at least 30 minutes for optimal flavor.
4. Sprinkle with toasted sesame seeds and garnish with fresh dill just before serving. Serve chilled.
