Cucumber and Thai Basil Salad

Why I Love This Recipe

FEATURING: Cucumber and Thai basil (or regular basil or mint) (or garlic). 

Simple yet tasty! If you don't have Thai basil, use regular basil or mint. If you don't have peanuts, use any other nut you have at hand.


Ingredients You'll Need

3 Tbs. seasoned rice vinegar
1 tsp sesame oil
1 tsp fresh lime juice
1-2 cucumbers, peeled, halved, seeded, and sliced diagonally into 1/4-inch-thick crescents
1/8-1/4 cup torn basil leaves (preferably Thai basil)
1/4 cup coarsely chopped peanut (salted or not) or walnut


Directions

In a large serving bowl, whisk together the vinegar, sesame oil, and lime juice. Add the cucumbers, basil, and nuts to the vinaigrette, toss, and serve.


Pairs Well With

Any Thai or Asian dish
