Why I Love This Recipe

I was going car camping down in Rock Creek Montana and was trying to come up with an easy diner. This is what I came up with


Ingredients You'll Need

1 medium onion
1 red bell pepper
1 - 1 1/2 TBS curry powder
1 tsp salt
olive oil
2-3 hand-fulls of wild rice
1 can of black beans


Directions

The night before we left for camping, I chopped up the bell pepper and onion. Combined the pepper and onion in a Tupperware container (or a zip lock back would work). Drizzle olive oil over peppers/onion, add curry powder and salt. Mix ingredients and refrigerate until you're ready to go camping.


At the campsite: boiled a pot of water, added rice and cooked until done. Stir in black beans and remove from heat.


Allow a pan to heat over the campfire. Once hot, empty entire contents of Tupperware container. Since the veggies already have olive oil, no need to add oil to the pan.


Once veggies are cooked, stir into pot with rice/beans.


Serve and enjoy the great outdoors.
