Dad's Favorite Casserole
Why I Love This Recipe
This is a variation of a shepherd's pie, but in my family we always knew it as "Dad's favorite casserole", and it was real midwestern comfort food. It was also one of the first dishes I cooked.
Ingredients You'll Need
1 pound lean ground beef
1 onion, chopped
1 can Campbell's Healthy Request Tomato Soup
2 tsp salt, divided
1 cup frozen green beans
4 large potatoes, peeled and cubed
2 TB butter
1/2 cup milk
Brown beef in a large skillet, breaking up the chunks. Add onions. Drain well when beef is completely cooked, and stir in tomato soup, green beans, and 1 tsp of the salt. Place mixture in a casserole dish.
While the meat is browning, boil potatoes for 15 minutes. Drain most of the water out, and mash potatoes well, adding the butter, milk, and the rest of the salt. I use a hand mixer to get a smooth consistency.
Place potatoes over the meat mixture in the casserole dish, and bake at 350 degrees for 30 minutes, or until bubbly.
