1 1/2 cups water, boiling
1 8 ounce dates, chopped
2 1/2 cups flour
1/2 cup brown sugar, firmly packed
3 1/2 teaspoons baking powder
1 teaspoon salt
3 tablespoons vegetable oil
1 egg
1 tablespoon orange peel, grated
1 cup nuts, chopped
Directions
Pour boiling water over dates and let cool. Mix remaining ingredients together; stir in cooled date mixture.
Grease the bottom of a 9x5x3" loaf pan.
Pour into pan; bake in a preheated 350 degree oven for 55-65 minutes or until toothpick inserted into the center comes out clean. Cool slightly then loosen the sides. Remove to a rack to cool completely before slicing.
The bread can be stored in the refrigerator for up to a week or frozen for up to 3 weeks.
the key to this bread being moist is to soak the dates and using a big tablespoon of grated orange peel.
