Directions
Place the potatoes in a large pot, cover with cold water, add a generous pinch of salt, and bring to a boil.
Cook the potatoes for about 15-20 minutes over medium-high heat, or until they are fork-tender.
Drain the potatoes and return them to the pot.
In a small saucepan, combine 1/4 cup heavy cream, minced garlic, and 1/4 cup Parmesan cheese over low heat, stirring frequently.
Gently warm the mixture until the cheese melts and the flavors infuse, about 3-4 minutes; be sure not to let it boil.
Mash the potatoes in the pot using a potato masher or a ricer for a smooth texture.
Add the butter, warmed cream mixture, and additional 1/4 cup heavy cream to the potatoes.
Mash more if needed, and season with salt and ground black pepper according to your taste.
Stir in the remaining 1/4 cup Parmesan cheese until just combined.
Transfer the mashed potatoes to a serving dish and garnish with chopped chives.
