Deconstructed Apple Pie Granita

Why I Love This Recipe

Nothing is more American than apple pie, but as the temperatures climb on the Fourth of July weekend, one can vividly imagine our Founding Fathers wilting in the stifling Philadelphia heat, bellowing, "Someone oughta open up a window!" Perhaps they could have come to accord more quickly and amiably if they could have done it over this frozen, crystalline interpretation of America's Dessert.

Ingredients You'll Need

3 cups apple juice
1/2 cup sugar
1 cup water
1/2 teaspoon cinnamon
dash nutmeg
2 teaspoons lemon juice
fresh mint sprig for garnish
caramel sauce for plate painting


In a medium saucepan, combine the sugar, water, and spices and bring to a boil, stirring until the sugar dissolves.

Let cool.

Stir in the fruit juice and lemon juice and pour into a chilled 13- by 9-inch metal baking dish. Place in the freezer and freeze, scraping with a fork every 30 minutes until the mixture is firm. Paint the inside of a cocktail glass with drizzles of caramel sauce, and top with scoop of granita. Garnish with sprig of fresh mint.
