Why I Love This Recipe

Babka bread is a Polish Jewish bread.

It is said to originate from the Poland and Ukraine areas.

The word "babka" comes from the Slavic word babcia, which means grandmother. Where ever it comes from, good Babka bread is wonderful stuff, and a real treat when made right.

Ingredients You'll Need

8 cups bread flour
1 cup white raisins
1/2 cup of sour cream
1/4 cup of butter
1 teaspoon of salt
5 egg yolks
1 cup white sugar
1+1/2 cup scalded milk
1 teaspoon lemon rind ( Zest)
2 packs of yeart, 1/4 ounce each

OPTIONAL Crumb Topping
1/3 cup white sugar
2/3 cup of all purpose flour
half a teaspoon of cinnamon
3 tablespoons of melted butter


Melt butter in the scalded milk, add the sugar and salt to the milk.

let it cool. now beat the egg yolks until as fluffy as you desire.

Once the milk and sugar and salt mixture is cooled, add the eggs and the sour cream, and the vanilla.

At this point add the white raisins, and the lemon rind. Mix this all together well.

Add the two packets of yeast to 1/4 cup of warm water, with one tablespoon of sugar. mix this, and give it a bit of time to bloom, maybe 10 minutes. Add to the milk mixture.

Now start to mix in the flour gradually, until it becomes a dough, and then knead it. Work it until smooth and elastic.

Place dough in a greased bowl and cover with a towel, and let rise for 1.5 hours in a draft free area. We find that a closed microwave with a glass of warm water in it, works wonderfully.

After 1.5 hours, punch it down and then divide into two separate dough loaves

Place these in a greased loaf pan, and once again let them rise in a warm area for an hour

IF you wish to add a crumb topping, you would add it now. Just take the ingredients for the crumb topping, mix until crumbly and spread it on top of the loaf

Bake it at 350 degrees for about 40 minutes.

Pairs Well With

Butter, and your favorite jelly, or jam is a real treat.
