The best carrot cake I've ever had. A total crowd pleaser. Can be made in a bundt pan, as a layer cake or cupcakes. Baking time may need to be changed accordingly.
Ingredients You'll Need
For the cake:
4 eggs
2 cups sugar
2 - 2 1/2 cups grated carrots
3/4 cup unsweetened applesauce
3/4 cup oil
2 cups flour
1 tsp salt
2 tsp baking soda
3 tsp cinnamon
1/2 - 1 cup of raisins
1/2 - 1 cup of walnuts
2 tsp vanilla
Cream cheese frosting:
3 oz cream cheese
1/4 cup softened butter
2-2 1/4 cup powdered sugar
1 tsp vanilla
Enough milk to achieve desired consistency (1/2-1 tsp)
Directions
Preheat oven to 350 degrees and grease 9x13 pan
Beat eggs and sugar together
Add oil and applesauce, then add dry ingredients and vanilla. Don't over-mix!
Bake in 9x13 greased pan for 30-45 minutes. Cool completely
Mix ingredients for Cream cheese frosting
Frost cake when cool.
