Directions
Place the dried apricots in a small saucepan with 1 cup of water. Bring to a gentle boil, then reduce the heat and simmer for 10-12 minutes, or until the apricots are soft and most of the water has been absorbed.
Allow the apricots to cool slightly, then blend them in a food processor or blender until smooth. If it's too thick, add a splash of water to reach a spreadable consistency.
Stir in the erythritol, vanilla extract, and cinnamon (if using). Taste and adjust sweetness as needed.
If you'd like the filling thicker to prevent spillage, return the mixture to the saucepan on low heat, sprinkle in the xanthan gum or cornstarch, and stir continuously for 1-2 minutes until it thickens.
