Donut Muffins

Why I Love This Recipe
I got this recipe from my Mom many years ago. She used to bake these every weekend when I was a kid and they always were so delicious! She's been gone for a long time now but every time I bake these I always think of her and smile!
Ingredients You'll Need
2 eggs
2/3 C cooking oil
1 C milk
3 C all purpose flour
1 T + 1 tsp baking powder
1 tsp salt
1 tsp nutmeg
1 C sugar
Directions
Using a fork, beat eggs in a large mixing bowl.
Add oil and milk and continue beating with fork.
Sift flour, measure and sift with sugar, baking powder, salt and nutmeg.
Add to mixture and stir with fork, very lightly. Do not over mix.
Using a mini ice cream scoop for consistency, turn into greased (or lined) muffin tins.
Generously sprinkle each muffin with a mixture of sugar and cinnamon.
Dot the tops with a small dot of butter or margarine.
Bake at 400 degrees for about 20 minutes.
*If using mini muffin pans, reduce oven to 375 degrees and bake for 15-18 minutes.
