Double Baked Lobster Filled Potatoes

Ingredients You'll Need

4 large baking potatoes
4 tablespoons butter
1/2 cup onion -- diced
1/2 cup mushrooms -- sliced
2 cups lobster -- cooked and cubed
1 cup white wine
1/2 cup whipping cream
1/2 cup Jarlsberg cheese -- shredded
1/4 cup cheese -- for topping


Bake potatoes at 375° F for 1 hour. Let cool. Slice off top to make a boat. Scoop out the inside without puncturing the shell and put potato filling in a bowl. In a skillet, melt the butter and cook the onion and mushrooms 10-15 minutes on medium heat. Add lobster and wine. Boil liquid away, 10-15 minutes, and remove from heat. Stir in cream, potato pulp, and cheese. If not smooth, add additional cream. Spoon into shells, put additional cheese on top and bake at 400° F until heated through and cheese is bubbly.
