Ingredients You'll Need

2 large Pontiac potatoes, peeled and cut into 1cm cubes
2 large sweet potatoes, peeled and cut into 1cm cubes
3 teaspoons margarine, melted
1/2 teaspoon salt
12 grinds black pepper
1 teaspoon garlic powder
1/2 teaspoon ground ginger


1. Preheat oven to 220C. Spray a baking tray with vegetable oil cooking spray.

2. Bring a large pan of water to the boil over a high heat. Add Pontiac Potatoes and cook for 5 minutes. Add sweet potatoes; cook until both varieties and tender, about another 5 minutes. Drain in a colander.

3. Mix margarine, salt, pepper, garlic powder and ginger in a mixing bowl. Add potatoes; toss to coat.

4. Arrange potatoes in a single layer on prepared baking tray. Bake for 15 minutes. Remove from oven, stir and spray with vegetable oil cooking spray. Bake a further 15 minutes, until lightly golden.

Serve immediately.


Prepare recipe through to the end of Step 2. Place potatoes in a large microwave safe casserole dish; top with margarine, salt, pepper, garlic salt and ginger. toss to combine. Microwave potatoes on High until cooked through, about 8 minutes.


Avoid overboiling potatoes as they will become mushy. Boil until they are just fork-tender because the potatoes will cook through in the oven.

If using only sweet potatoes, try other sweet flavourings, such as honey, brown sugar or corn syrup. You might also use spices such as nutmeg or cardamom.
