Down Home Mac & Cheese

Why I Love This Recipe
I'm a huge mac & cheese fan, but have always had trouble finding a recipe that was cheesy enough - my mom (my food hero) passed this on to me - best mac & cheese yet!
Ingredients You'll Need
2 tbsp butter
2 tbsp flour
1 cup milk
250g velveeta cheese product, cut up (approx. 1 1/2 cups)
2 cups macaroni, cooked & drained
1/2 cup old cheddar cheese (shredded)
1/4 cup crushed crackers (i love to use ritz - they're so nice and buttery!)
Directions
Preheat oven to 350F
Melt butter in medium sauce pan on medium heat. Add flour & mix well. Cook 2 min, stirring constantly. Gradually add milk, stirring until well blended. Cook until mixture boils & thickens, stirring constantly.
Add Velveeta. Cook 3 min or until velveeta is completely melted, stirring frequently.
Add macaroni, mix lightly.
Spoon into 2 qt casserole dish sprayed with cooking spray. Sprinkle with the shredded cheese & crackers. Cover.
Bake 20 minutes or until heated through.
