2 cups powdered sugar, divided
2 tbsp milk, as needed for icing

Directions
Preheat the oven to 375°F (190°C). Line baking sheets with parchment paper.
In a medium bowl, mix 2 1/2 cups of flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt. Set aside.
In a mixing bowl, beat 1 cup of softened butter with 1/2 cup of granulated sugar and 1/2 cup of brown sugar until light and fluffy.
Add 1 egg and 1 teaspoon of vanilla extract to the butter mixture and beat until combined.
Gradually mix in the flour mixture to form a cookie dough.
Roll out dough, using flour as needed to dust, and cut out bunny shapes using cookie cutters. Place on the prepared baking sheets.
Bake for 8-10 minutes or until the edges are lightly golden. Allow to cool on a wire rack.
For the icing, mix 2 cups of powdered sugar with milk, adding a tablespoon at a time until desired consistency.
Divide icing and color each portion with different pastel shades.
Decorate cookies as desired using the icing. Allow to set.
Assemble by sandwiching a layer of icing between two cookies, forming cookie sandwiches. Enjoy!
