Easy Black Bean Soup

Why I Love This Recipe

This is simple and very tasty you can always make it hotter or vegetarian

Ingredients You'll Need

2 cans 16 os black beans undrained
1 cup chicken broth
nonstick cooking spray or oil
1 small onion chopped
1 16oz jar salsa- thck and chunky
1 tspn bottled minced garlic
4 tspn lime juice
2 tspn ground cumin
1/4 teaspoon crushed red pepper (optional)
1/3 cup plain yogurt or sourcream (optional)
Fresh cilantro (optional)


Place 1 can of beans with liquid and chicken broth in blender or processor and blend until smooth.

Coat large sauce pan with oil or cooking spray. Heat over medium-high heat. Add onion and garlic cook until onions are soft,

Add Blended bean mixture, remaining beans and liquid, salsa, lime juice, cumin, and crushed red pepper. Bring to boil, reduce heat to low and cover

Cook stirring occasionally for 25-30 minutes. Serve with plain yogurt or sourcream and cilantro.
