Easy Bok Choy Stir Fry with Thai Basil

Why I Love This Recipe
FEATURING: Broccoli, kale, white turnips and/or kohlrabi, broccoli, bok choy (or pac choi), green onions, garlic scapes (or garlic) and basil (optional).
A quick and easy stir fry our kids love. Sugar can easily be left out as I often do. There are a few steps but they are all really easy and quick.
Ingredients You'll Need
RICE
3 cups of rice - cooked according to package
TOFU (optional - you can omit it entirely or use any other protein of your choice cooked as you like it in a stir fry) NOTE: if your tofu is really wet, try to press on it a few seconds to drain a bit of liquid before dicing it)
1 tsp oil (ex: sunflower oil)
1 14 ounce extra firm tofu, diced in large cubes (ex: from La Soyarie)
A bit of soy sauce
STIR FRY
1-2 Tbsp oil (ex: sunflower or if you have sesame oil, use it)
1 broccoli (florets and stem - remove outer skin of stem), chopped
2-3 white turnips (rabioles), cut in thick matchsticks (or 1-2 kohlrabi bulb, chopped in thick matchsticks)
1-2 cups of chopped leafy greens (ex: kale, spinach, kohlrabi leaves, etc.), chopped in thin ribbons
3-4 bok choy leaves, chopped (keep both the leaves and the white part separated but chopped)
STIR FRY SAUCE
½ cup vegetable broth
1 tsp cornstarch
6 Tbsp soy sauce or Tamari (which is gluten-free)
4 Tbsp brown sugar (honey would also work)
½ tsp hot sauce optional (ex: Sriracha) or crushed red pepper flakes
2 tablespoons minced fresh ginger (optional)
2 garlic scapes, chopped (or 2 garlic cloves, minced)
TO SERVE
2 green onions, chopped
A few handful of Thai basil, chopped (optional- regular basil works too)
Directions
RICE: Make the rice according to package. While it is cooking, make the rest of the recipe.
SAUCE: Make the stir fry sauce by mixing all the ingredients in a mason jar, closing the lid and shaking it well. Set aside.
TOFU: In a medium pan, add the 1 tsp of oil. When hot, add the tofu. Stir fry 5-10 min, stirring frequently to make sure that the tofu yellows/browns a little without burning and that it cooks evenly, on all sides. When starting to yellow/brown, add 1-2 small splashes of soy sauce. Mix well when you do so. When cooked, remove from heat and set aside.
VEGETABLES: In a large pan, add the oil. When hot, add the broccoli and stir fry 1-2 min. Add the white turnips and the white part of the Bok Choy and fry 1-2 min. Add the leafy greens, if using, as well as the chopped Bok Choy leaves. Stir fry another 2-5 min, or until the vegetables are still crisp but tender. Add the stir fry sauce to the vegetables. Mix well and remove from heat.
ASSEMBLY: Put rice in each bowl. Top with veggies and tofu. Top with Thai Basil and green onions. Bon appétit!
