Why I Love This Recipe

We live in FL. No matter what restaurant you go to, Key lime will be on the dessert menu. So, we wanted to see what a good "basic" key lime consists of, and it was surprisingly simple. Give it a try, it's always good on a warm day.

Ingredients You'll Need

1 1/2 cups graham cracker crumbs
1/3 cup sugar
6 Tbsp melted butter
4 large egg yolks
1, 14-ounce can sweetened condensed milk
1/2 cup Key lime juice


Preheat oven to 350

Take your Graham crackers and crush them with a rolling pin or pulse them in your food processor

Melt the butter gently, and then mix the melted butter with the cracker and sugar

Press this mixture evenly into your 8 inch pie tin, and then toss it in the fridge to set.

Now, take a bowl and separate your 4 large egg yolks from the whites. Save the whites for breakfast!

With a stiff whisk, slowly add the condensed milk to the yolks, beating pretty feverishly for about 3 minutes or so to get them light and fluffy and airy.

When they're looking nice and light yellow, slowly drizzle in the Key Lime juice.

Once it's all smooth and looking good, pour it into your chilled pie shell

Toss in the oven, and bake for about 10 minutes

At the 10 minute mark, take it out and place it on a cooling rack. Then once cool enough to put in the fridge, place it in the fridge to really set. Key lime is served almost ice cold, so it gets that famous texture and "wiggle." You can add whipped cream to this of course if you'd like, but I prefer it "as is"

Pairs Well With

Whipped cream is very common with this, as is a very light dusting of cinnamon
