Easy Chicken Picatta

Why I Love This Recipe
I love recipes, comparing ingredients, cooking methods, etc. I think that is why the Internet is so great! This is one of the recipes that came from mixing about 5 different picatta recipes into one that my children will eat with ingredients I almost always have on hand.
Ingredients You'll Need
1 1/2 lbs boneless skinless chicken thighs, flattened to 1/2 inch thick
1 T lemon pepper seasoning
1 T olive oil
4 T butter
3 T capers
1/2 cup lime juice
1/2 cup chicken stock
1 t salt (or more to taste)
1/2 t ground black pepper
1/4 cup parsley, chopped
Directions
Sprinkle chicken with lemon pepper seasoning.
Cook chicken in olive oil till brown, about 4 minutes each side.
Remove chicken from pan.
Melt butter in pan with olive oil and chicken drippings.
Ad capers and quickly saute for 1 minute over medium heat.
Add lime juice, chicken stock, salt, pepper and let reduce, about 5 minutes.
Add chicken back to pan and cook another 5 minutes or till ready to serve.
Garnish with parsley.
Serve with rice and brocolli
