Easy Farm Sub

Why I Love This Recipe
FEATURING: Tomatoes, sweet peppers, onion, arugula (or lettuce or leafy green). Cucumber, carrots and jalapeno are optional.
A nice and easy sub you can make with farm fresh ingredients! You can eat it with or without the two options of dressings we suggest! You can add hummus or any protein of your choice if you like! Good either way! Adjust quantities based on how many subs you want to make!
Ingredients You'll Need
A few tomato slices
A few sweet pepper slices (seeds removed)
1/8 of an onion, finely chopped
A few handfuls of arugula (or lettuce or other leafy green)
A few cucumber slices (optional)
1/2 carrot, grated (optional)
A few kalamata olives, sliced (optional)
A few slices of jalapeno pepper (optional)
A 12 inch subway bun of your choice, cut in half lengthwise
DRESSING OPTION #1: CREAMY SWEET MUSTARD SAUCE (optional) - this makes way more than what you need. You can keep the leftover in the fridge and/or eat it as a dip)
1/2 cup vegan mayonnaise (or regular mayo)
1 Tbsp Dijon mustard
1 Tbsp yellow mustard
2-3 Tbsp maple syrup (honey also works)
1 tsp apple cider vinegar ($0.02)
1/2 garlic clove, pressed (optional)
1/8 tsp salt, or to taste
freshly cracked pepper (about 5 cranks of a pepper mill)
DRESSING OPTION #2 (optional) - this also makes way more than what you need. You can keep the leftover in the fridge and/or eat it on salads)
3/4 Cup Olive Oil
1/4 Cup Red Wine Vinegar
1 Teaspoon Dried Basil
1 Teaspoon Dried Oregano
1/4 Teaspoon Salt
1/4 Teaspoon Pepper
Directions
Choose which dressing option you want to make, if any.
Make the dressing you want:
FOR THE DRESSING OPTION #1 (optional): Combine all the ingredients in a bowl and stir until smooth. Use immediately or refrigerate until ready to use.
FOR THE DRESSING OPTION #2 (optional): Combine all the ingredients in a bowl and stir until smooth. Use immediately or refrigerate until ready to use.
Now make your sub!
FOR THE ASSEMBLY: Open the subway without cutting it in two completely. On one side, put the tomato slices. Add sweet pepper slices on top.
On the other side, put the cucumber slices and a bit of grated carrots (if using). Then add the arugula and onions. Then add the olives and jalapeno, if using. Add as much or little subway sauce as you'd like (optional).
You can also add the protein of your choice- just add it before the arugula (NOTE: if using hummus, simply spread some on the inside of the bun).
