Eating right, in large part, is simply just opting for a homemade version something. While canned vegetable broth is convenient, it's often times loaded with a lot of less than desirable ingredients. Making vegetable broth in your own home is simple and a great use of about-to-expire vegetables. There is no exact science to this, feel free to swap vegetables I've suggessted for ones you have on hand or prefer.
Ingredients You'll Need
1/2 head green cabbage
1-4 carrots
1-4 celery stalks
1 onion
5-10 garlic cloves
Any other vegetable you desire to add
Salt and pepper to taste
Directions
Place vegetables in a medium to large crock pot. Cover vegetables with water. Cook on low for 4-7 hours. Remove vegetables and strain broth if desired. Store in a large container in the refrigerator for about a week, or store in freezer for up to 6 months.
