Ingredients You'll Need
1 cup brown lentils
6 cups of water
2 carrots, diced
2 cups diced tomatoes (Or you can use a 15 oz can or tetrapack of chopped tomatoes.)
½ tsp. oregano
1 clove garlic, minced
Directions
Cook (boil, then simmer) the lentils for 30 minutes, until soft. Add sliced carrots, minced garlic, chopped tomatoes (along with liquid), and oregano. Bring to a boil, then simmer until carrots are soft, about 45 minutes.
