Easy Oven Roasted Vegetables

Why I Love This Recipe
My mom first served me oven roasted asparagus that Aunt Jackie taught her to make. They were delicious! I don't always have fresh asparagus, but almost always have onions and some other vegetables that will roast in an equal amount of time, such as green bell pepper and zucchini. Delicious with baked or grilled fish!

Ingredients You'll Need
Any of the following will roast well together:
Zucchinni, sliced in long spears
Onion, cut in chunks and peeled into a couple of layers to roast better
Green bell pepper, cut into chunks
Asparagus (I gently grab the end of the stalk until it snaps- usually what is left is the most tender and that's what I use)
Olive oil
Seasoning: measures are estimates
1/4 - 1/2 teaspoon garlic powder
Medium coarse sea salt to taste
1 Tablespoon dried onion flakes
Directions
Mix together the seasoning and set aside.
Prepare the vegetables and place them on a cookie sheet with an edge.
Drizzle olive oil over the vegetables and mix them with your hands.
Sprinkle the seasoning that has been mixed together over the vegetables and stir the vegetables with your hands again.
Put the cookie sheet in a hot oven, preheated to 450 degrees.
Stir once or twice, letting the vegetables brown as you desire.
Bake until the desired softness (usually around 10 - 15 min.)
