Why I Love This Recipe

My wife's favourite cookie. I have to always have some frozen rolled up dough in the freezer to bake at a moments notice.

Ingredients You'll Need

1 Cup Butter
8 ounces Cream Cheese
3 Cups Confectioner Sugar
2 Eggs
1 tsp Vanilla
1 tsp Baking Powder
3 1/2 Cups flour


These need to refrigerate before cooking and make a great "Cookie on Demand"

Cream butter and cream cheese - best done if everything is at room temperature. A mixer helps, but I just use a fork.
Slowly add sugar, egg and vanilla.

Add flour and mix in baking powder before stirring. Mix until a good consistency.

Break into 4 sections.
With a little extra flour, roll into 1" thick tubes and wrap (with extra flour) in wax paper. Add all 4 rolls into a gallon ziplock bag and freeze.

When cookies are desired, preheat oven to 350.
Cut rolls into as many cookies as you want and put on greased cookie sheet. I often cook as few as 6 - since they are good warm and fresh.
I like 1/4" thick cookes and the come out soft. My wife likes 1/8" thick and they cup up harder and crisper.

Pairs Well With

Surprisingly not too sweet. Good snack to accompany afternoon coffee.
