Easy Vegan Green Bean Curry

Why I Love This Recipe

It was very filling!


Ingredients You'll Need

1/2 lb. of green beans (pre-cooked)
2 medium potatoes
1 onion
3 garlic cloves
1 can coconut milk (13.5 oz)
70g tomato paste *I'd use a bit less
4 tsp curry powder
1 tbsp soy sauce
2 1/2 tbsp sunflower oil
2 tsp salt
1/2 tsp black pepper


Directions

Peel and cut up potatoes into small slices (salt, pepper, oil)


Cut up tofu (or your choice of protein) and repeat process. (I used the air fryer for the tofu)


Set aside.


Caramelize onion and garlic in oil. Add curry & stir.


Add milk, paste, curry, soy, salt and pepper.


Stir all in.


Serve over fresh rice.
