Why I Love This Recipe
There’s something about a slow-cooked beef stew that just feels like home—especially on a chilly day. My folks recently whipped up a batch during a snowstorm, and it got me craving that same cozy, nourishing goodness. But let’s be honest, I’m in a season of life where I need my meals to be simple, nutritious, and quick to prep. Enter: this effortless, grain-free beef stew.
This crockpot recipe takes less than 20 minutes to throw together in the morning—just chop, toss, and let the magic happen. By dinnertime, you’ll walk into a house filled with rich, savory aromas and a meal that practically cooked itself. No flour, no fuss—just fresh, wholesome ingredients doing what they do best.
It’s packed with tender beef, sweet potatoes, garden-fresh veggies, and warm, earthy spices. Everything slow-simmers into a broth so rich and flavorful, you’ll want to grab a spoon before the bowls hit the table. Serve it up as is, or pair it with a hunk of crusty bread (if you’re not grain-free) for the ultimate comfort meal.
This one’s a keeper. ❤️
Ingredients You'll Need
1 lb beef stew meat, cut into 1-inch cubes
2 cups beef broth
2 medium carrots, peeled and sliced into rounds
2 ribs celery, chopped
1 medium onion, chopped
2 cloves garlic, minced
2 medium zucchinis, quartered and sliced
1 medium sweet potato, peeled and cubed
1 teaspoon dried thyme (or 2 teaspoon of fresh)
1 teaspoon paprika (I like smoked)
1/2 teaspoon black pepper
1/2 teaspoon salt
2 bay leaves
1 tablespoon olive oil
Directions
Heat the olive oil in a skillet over medium-high heat and brown the beef on all sides (optional for added flavor).
Place the browned beef (or raw beef directly) into the crockpot.
Add carrots, celery, onions, garlic, zucchini, and sweet potato on top.
Sprinkle thyme, paprika, pepper, and salt over the contents.
Pour in the beef broth and add the bay leaves.
Cover and cook on low heat for 7-8 hours or high heat for 4-5 hours.
Stir before serving and remove the bay leaves.
Pairs Well With
Alcoholic: Red wine (e.g., Cabernet Sauvignon). Non-alcoholic: Sparkling water with a slice of lemon.
