Egg Salad

Why I Love This Recipe
Egg salad is a favorite as sandwiches or served with crackers for lunch.
Ingredients You'll Need
6 hard cooked eggs, peeled and chopped
3 T. chopped green onions
1/4 c. chopped sweet pickles
salt and pepper to taste
1/4 c. mayonnaise (more if needed)
Directions
Cook eggs in gently boiling water for about 7-8 minutes. Immediately pour off boiling water and cover with cold water. Crack eggs over all against counter and peel while hot, the eggs peel easier when warm than when cold, it makes it easier to get under the membrane between the egg and the shell. Peel eggs and chop. Combine all ingredients in a bowl and mix well. Add additional mayo as needed, mixture should be fairly moist. Chill until serving.
