Ingredients You'll Need
8 mushrooms, chopped
8 spinach leaves
1 clove garlic, diced
1 tbsp onion, diced
1 tbsp olive oil
Beat the two eggs in a bowl using an egg beater.
Add spinach, mushrooms, salt, and pepper to taste.
Mix well to incorporate all the ingredients.
Heat up the olive oil in a pan to saute the garlic and onion.
Add the eggs to the pan. Flip or fold the omelet. Cook until done.
