Egg in Meatloaf Elaine Mazur's Style

Why I Love This Recipe
This is my Grandma's recipe I never made it I don't know why 'cuz I really liked it.
Ingredients You'll Need
Hard boil 6 eggs (it will prob only need 4-5 but you'll have the extras in case something happens. Eat any leftovers)
(There's a Optional deviled eggs version I never tried but will put it here incase you wanna try it :))
Opt Deviled egg version:
6 hard boiled eggs cut in 1/2 lengthwise and yellow centers put in mixing bowl and add
3 TBS Mayonnaise
1 tsp Apple cider vinegar
1 tsp yellow mustard
sprinkle paprika
(or your fav deviled eggs recipe)
Meat mix:
3 Lbs ground beef
1 onion rough chopped kinda small
Opt: 1 red or green sweet bell pepper (I always add)
garlic powder
pepper
Stove Top chicken stuffing mix ground up in food processor (or regular season bread crumbs not Italian seasoned)
Topping:
2/3 cups Ketchup
1/2 C Light brown sugar
Opt: 'bout 1/2 - 1 tsp yellow mustard
Directions
Meat mix
Mix all ingredients together and divide in 1/2 (don't overwork the meat)
Place 1/2 of the meat in baking pan and shape in kinda meatloaf shape. Use glass lengthwise in center of meatloaf making sure there's meat on all sides and press dwn a lil to make U shape depression. Lay hard-boiled eggs in depression in the meat. If using deviled egg version put the yolk mix back in whites sprinkle w/ paprika and put 1/2's back together and lay them in the depression in the meat. Top with other 1/2 of meat mix making sure meats all around the eggs. Add a lil water to the pan so it don't burn cover and bake at 350F for about an hour then uncover. Mix topping ingredients together and spread over top of meatloaf. Put back in oven and finish cooking and well browned.
