Why I Love This Recipe

This is for my daughter Satara. Since she was 5 I have been teaching her to cook. We started with breakfast as she is not a cereal kid. Enjoy!


Ingredients You'll Need

1 piece of bread
1 egg
3 tablespoons butter
salt, pepper


Directions

With a glass cut a hole out of middle of the piece of bread.


Melt butter in a fry pan. place bread and hole in melted butter turn to butter both side. Crack egg into hole of bread. Add salt and pepper When whites start to turn white flip over bread and hole. Cook until done...Mom

I used to make these for my children, except I would toast one side a little first, flip it over then add the egg. Cook until set, flip it over again and top with crumbled fried bacon and an American cheese slice...cover to let chees melt. They loved it!

I used to make it for my kids when they were young, all are over 30 now, and we called it Egyptian Eye. Thanks for the reminder. We always toasted the circle cut out by the glass-it was my kids favorite toast, another nice memory. lucas

My mother used to make this when I was little but she sprinkled paprika on it and called it red eye.
