Why I Love This Recipe

An old Irish recipe that we thought was passed down from ancestors, but really came in the mail with the gas bill to my grandmother in the 50s.

Ingredients You'll Need

2 cups sifted flour
⅓ cup sugar
½ tsp salt
1 ½ tsp baking powder
½ tsp baking soda
½ - ⅓ cup raisins
1 egg
⅔ - 1 cup buttermilk
1 tsp melted butter

Sift together flour, salt, sugar, baking powder, and baking soda into a bowl.
Add raisins and beat egg lightly.
Add ⅔ cup of buttermilk, and butter.
Stir into dry ingredients and mix just until moistened throughout.
If necessary, add enough buttermilk to make a stiff dough which clings together.
Turn onto a floured surface and knead lightly 8 or 10 times.
Shape into a ball and flatten.
Place on a greased baking sheet or in loaf pan.
Bake at 400 degrees F for 40-50 minutes or toothpick comes out clean.
