Enchilada Stuffed Sweet Postatoes

Ingredients You'll Need
For meat stuffing mix:
1 cup diced sweet onion
1 medium diced poblano pepper, seeds removed
4 cloves of minced garlic
1 teaspoon salt
1 lb ground beef
3 tablespoons of oil
6 sweet potatoes
Toppings:
sour cream
Avocado diced
cilantro
black olives
Cotija cheese
black beans (canned)
brown rice (cooked)
Directions
Preheat over 400 degrees
Spray potatoes with olive oil
Prick potatoes with a fork
Bake until tender, about 45 minutes
Add oil to pan,
sauté the onions, poblano pepper, garlic about 5 minutes
add beef and cook until no longer pink and pepper are soft
add salt and stir
Cut open potatoes add meat stuffing mix and top with toppings
